  Different from the fluidized bed method, spray drying cannot produce complete microcapsules. We are not building shells or matrices on the outside of particles. In contrast, the spray drying process forms a dispersion or emulsion of one ingredient in another ingredient and then dries the emulsion very quickly. On the outer surface of the resulting dry particles, there will always be some active ingredients, while the inner core is more protected.
